Pear Charlotte

Pear Charlotte is made from a light, fresh William pear mousse and a creamy Madagascar vanilla mousse, almond sponge and caramelized pears. The combination of pears and vanilla give this cake a natural touch of sweetness, while the light mousse and almond sponge melt in your mouth giving it an irresistible texture. It is served with two crunchy almond biscuits to add to the combination of textures and flavours. Pear Charlotte is an example of how Carles Mampel combines taste, texture and presentation in the one cake.

Recommendations:

Charlotte de peras is best served with a light sweet wine like Gra a Gra, produced by Gramona winery in Cataluña. This sweet wine is made from hand-selected grapes, “grain by grain” as the name suggests. It is best served cold to accompany the Citrus chocolatey flavours. It is also good served with a chilled cava.

Consume:

Charlotte of pears is best served slightly chilled to enjoy  the light and fluffy texture of the williams pear mousse. It is left to sit for 24 hours in the Bubó workshop, after it is made, so the flavours are at their best. It is recommended to consume the cake within two days of purchase and keep it refrigerated. Take Charlotte of pears out of the fridge about 30 mins before you would like to enjoy it to bring it to it´s perfect serving temperature.
