The coca is possibly the most universally known Catalan food and although it´s found in almost every bakery in Catalonia it is also found in many forms all over the Mediterranean, including in it´s Italian form, the pizza. There are many diverse cocas, with four main varieties: sweet, savory, closed and open. All of them use a base of dough as the main ingredient, which is then decorated. However, the bubó coca is in a different class and once it´s tasted for the first time it is obvious why. Carles Mampel gives us a coca with a base made from thin layers of the puff pastry, made from pure butter, caramelized slowly and carefully during its cooking process. This is then smothered in a variety of toppings which are bound to please every palate.
